Bulk Beef Questions
- When pricing live animals it is different from pricing widgets, there are a lot of factors that can influence pricing. Weight is the main factor. We can take 5 steers to process and they will all be different weights and yields. In an effort to make everything fair for the consumer and producer we market our cattle based on what is called hanging weight. Think of Rocky Balboa's sparring partner. This puts the price on the weight of the good stuff, while removing the weight of the things you aren't going to eat. The percentage of hanging weight to live weight is called dressing percentage. Dressing percentage is influenced by both genetics and nutrition. Our cattle typically have a dressing percentage of around 63-68%. The resulting hanging weight is then processed according to your custom cut selections. The difference is the hanging weight and what ends up in your freezer is called carcass yield. Our cattle typically fall into the Yield Grade 1 or 2 category, which means that the carcass yield is usually between 75-80% of hanging weight. In the end, your custom cut selections will influence the weight of the end product. Therefore we base our pricing on the hanging weight, the weight of the good meat before it is cut into steaks.
- When you complete the order form, you will be given an estimate of the total cost based on an assumed weight and asked to pay a $1,000 deposit. We try our best to be as fair to the consumer as we can and with cattle futures changing every day, we price our beef as follows and update it monthly: CME Live Cattle Futures current month price X 3 = Price per pound of hanging weight
- Here is an example from August 2022:
- Live Weight: 1,350 lbs (most of our cattle finish between 1,200-1,500 lbs)
- Dressing Percentage: 64%
- Hanging Weight: 864 lbs
- CME Live Cattle price: $1.403
- Your Price Per Pound of Hanging weight: $4.21 per pound ($1.403 x 3)
- Total Cost including processing: $3,637.44
- Estimate of your price per pound that you can compare to the grocery store beef that probably came from Brazil or who knows where:
- Hanging Weight: 864 lbs
- Carcass Yield: 77%
- Meat to your freezer: 665 lbs
- Cost per pound: $5.47 per pound ($3,637.44 / 665)
- Moral of the story here is that you are getting high quality, safe, downright delicious steaks/roast/ribs/brisket/hamburger for around the same cost as ground chuck in the grocery store.
- Here is an example from August 2022:
- When considering freezer space, a good rule of thumb is that a whole beef will take about 16 cubic feet of space. Keep in mind that you may want to have other items besides beef in your freezer, so bigger is better if space allows. Another thing to consider is that while a stand up freezer will definitely do the job, a chest freezer will stack cuts better. The stand up freezer, when packed to capacity, can result in a very exciting door opening at times.
- There's no real exact math to answer this question. There are several variables that could affect this, however a year and a half is a good estimate. We have eaten beef out of our freezer that was over two years old with no issues. Most people are ready to order more before this becomes an issue.
- The preferred method is to come pick up your meat directly from the processor or our farm. According to how far you live from Colquitt, GA you will want adequate coolers, freezer, etc. The meat will be frozen when you pick it up, so treat it like you do the ice cream you get at the grocery store. Most of our local clients just put the boxes in the back of an SUV with no ice or coolers and head home with no issues.
- We will bring it to you at a rate of $5.00 per mile. If you or your friends have multiple orders in the same area, we will only charge one delivery fee. Please call to discuss this option.
- We do not ship via UPS, Fedex, USPS, etc.
- We currently only sell whole beefs. We can split an order in half and you can even choose different cuts. However, you have to find a friend to buy the other half. From our point of view it is one order that is packaged separately. We do not package quarters because then someone is going to miss out on a few cuts. You can split up the meat after you pick it at your discretion. If you need us to split the money up, please contact us.
- We will ask for a $1,500 deposit with your order form. The remainder of the balance is due prior to pick up. The final balance will not be calculated until the hanging weight is established. Your price per pound will be set when the order form is completed.
- We typically use the PayPal link in the order form, however if you would like to pay with cash or check we take that too. Just send us an email or give us a call.
- This is where experience is a real help. When trying to decide if an animal is what we call "finished" or ready to be processed, there are several factors that come into play. The most important one is actual eyes on the animals. It is not as simple as, when it gets to 1300lbs load it up. You want to look at each animal individually for certain characteristics. To name a couple: fully filled out brisket area and fat rolls on the tail head. This could happen at 1200lbs or 1500lbs according to the frame of the animal.
- Most of our cattle finish in the 1200-1350 pound range.
- The number of individual cuts may vary depending upon the size of your animal and your custom instructions, but here's a go at it:
- *The following are per HALF, so double them for a whole*
- Roasts: 3-4lbs each
- Shoulder: 3-4 packages
- Chuck: 6-8 packages
- Sirloin Tip: 3 packages
- Rump: 1 package
- Round: 2 packages
- Steaks: standard is 1" thick
- T-Bone: 10-12 steaks
- Ribeye: 12-16 steaks
- Flank: 2 steaks
- Round: 8-10 steaks
- Sirloin: 6-8
- Ground Beef: this could vary a lot based on if you include any other cuts in the grind.
- 70-100lbs
- Stew Meat: 8 packages
- Short Ribs: 3 packages
- Soup Bones: 5 packages
- Brisket: 1 package
- Assuming that we have a finished animal ready to go there will be a 20-30 day lead time. We try not to take an animal to the processor until a deposit is received. We like to let our beef hang a minimum of 15 days with a goal of 21 days. It then takes a couple days to cut and package. We will work with you on scheduling a pick up date and can be pretty flexible.
- If we do not have a finished animal ready to go:
- You will be contacted with an estimated date of when one will be ready. If the wait time is too long for you to wait, we will completely refund your deposit.
- This does happen from time to time, however we calve year-round so there is usually not a long time to wait. If the wait time is over 3 months, we will note it on the website and order form.
Unless requested otherwise, your order will be vacuum sealed. Most people prefer vacuum seal, however if you prefer white butcher paper we can do that as well. If you plan to use an upright freezer, we strongly recommend butcher paper. Vacuum sealed bags don’t stack as well and can create a challenge in an upright freezer. Please note that you request butcher paper on the order form in the Special Instructions section at the end of the order form. There will be a $100 discount for using butcher paper.
All of our meat is USDA inspected at processing. Each package of meat will come with both our and our processor's USDA approved labels.
Beef Box Questions
- Overnight via UPS/Fedex. You will be provided with a tracking number upon creation of the shipping label.
- Our team at Rock Road Cattle Company continuously looks for ways to reduce our impact on the environment and have recently partnered up with a Georgia based organization that makes insulative material out of recycled water/soda bottles versus the Styrofoam that most people use to ship their products! This product is engineered to keep our Downright Delicious Beef nice and frosty cold as they travel to you and is 100% recyclable! The outer white wrap is LDPE plastic which should be removed and taken to your local grocery store for recycling and placed into the #4 plastic bins. The inside material is made from water/soda bottles and is recycled #1 PET so can be placed into your curbside bin for recycling.

We are open to discussing this with you. Please contact us to talk through your ideas. We will be glad to insert your marketing material into our packaging, however we currently are not able to change the product inventory. Meaning that we can add whatever marketing material to a Downright Delicious Beef Box, however we are not going to change the meat selection of those boxes.
